Rogers’ Chocolate – Lemon Pistachio Brittle
I don’t do brittle too often, but every so often I get the desire to have some. Brittle with some fresh nuts is really the bees knees. And so here I am with a somewhat different take on brittle. Pistachio is not something I have seen too often with brittle, and having a dash of lemon seems very intriguing to me.
There’s a little drizzle of dark chocolate on top, and the bottom and sides are also covered in dark chocolate as well. I was interested this mostly because dark chocolate seems a fitting pair for brittle. As I get older my sweet tooth gets less…well sweet. Milk chocolate paired with brittle seems like it would be overpowering and dark is the preferred chocolate to balance things out.

The toffee flavour is somewhat there, but the most prominent flavours are the lemon. There’s a very distinct, lemon peel zest flavour going on, and it contrasts against the buttery toffee flavour quite well to give a nice zing, some nice zip to it. The pistachios are a bit hard to detect, and the flavour is mostly the interplay between toffee and the very strong lemon peel. The dark chocolate is there as well, but it mostly helps to add a bit of rich cocoa flavour and help balance out the sweetness of the toffee. Overall it doesn’t taste too sweet like most brittle do, and I’d say that’s mostly the lemon oil working overtime.

The texture is what you get from a typical toffee that isn’t too thick. Some toffee when you bite into it get really sticky after, but this one isn’t too bad, probably because of the pistachios and the chocolate helping to smooth things out and keep it from being sticky. The brittle itself is not too hard or soft, and has just the right amount or crunch to satisfy. While I can see the pistachios, I can’t really detect them amongst the brittle, probably because it’s roughly the same consistency. Maybe if the pistachio pieces were bigger.
Honestly though, overall a pretty good execution and certainly a unique take on brittle I haven’t seen too much of. I’m not sure if I just don’t explore the brittle space enough or these folks are good, but I can at least confirm that I would do these again. Brittle may not be for everyone, but the inclusion of some good quality chocolate makes this a great entry point for everyone.
